Brunch At Home Recipes

There is no better way to celebrate the weekend than with...a brunch! No need to get up early and make breakfast, you can relax and then get the whole family together to make a tasty brunch for all. Here are some of our favorite recipes!



Cheesy Eggless Breakfast Muffin - makes 10

Ingredients

1 small bunch of green onions

2-3 small sweet peppers

4oz. bag of shredded hash browns

12oz. colby jack cheese

2 avocados

2 limes

1 tsp salt

1 tsp pepper


Directions

1) Preheat oven to 375 F

2) Grease muffin tins with oil

3) Dice peppers and onions and cut lime in 1/8 sections

4) In each tin, put a bit of the pepper, onion, 1/2 tbsp cheese, 1/2 tbsp hash browns

5) Repeat step 4 so there is a second layer. Top with 1/2 tbsp cheese.

6) Bake for 30 mins

7) While baking - mash avocado, add salt and pepper

8) Once muffins are done and cooled, top with avocado and enjoy!


Pancake Skewers - makes 12

Ingredients

Pancake

1 medium egg

1/2 all-purpose cup flour

1 tbsp sugar

1/3 cup whole milk

2 tbsp unsalted butter (melted)

1/2 tsp cinnamon

1 tsp vanilla extract (optional)


Toppings

1 cup strawberries

1/2 cup blueberries

1/2 cup raspberries

1 medium banana - sliced

Directions

1) In a medium bowl, beat egg & add pancake ingredients

2) Heat griddle on medium heat with some oil

3) Create pancakes roughly 1 inch in diameter (recommend a spoon or squeez bottle)

4) Cook until bubbles form, flipping when bottom is golden brown (roughly 1-2 min)

5) Skewer fruit on, alternating with fruit

6) Serve with fruit!

Breakfast Burrito - 1 burrito

Ingredients

3 slices of bacon

2 eggs

1 tbsp water

1/2 cup diced tomato

1/2 avocado, diced

3 scallions, sliced

1 flour tortilla

1/2 cup shredded cheese

1/2 cup baby spinach

salt & pepper


Directions

1) Cook bacon until crispy, drain oil on paper towel

2) Whisk eggs with water and season with salt & pepper

3) Place skillet on medium high heat, scramble eggs

4) Microwave tortilla

5) Assemble all topping on tortilla and wrap it up!
