We love all things bite-sized! These bite sized lasagna cups with a healthy twist are perfect for the whole family to enjoy. For those who love the crispy outer edge pieces, these lasagna cups give that experience in every bite. Did we mention how easy it is, your kids can take the lead!
5 wonton wrappers
1/4 cup ricotta cheese
1 tbsp grated parmesan cheese
1 small zucchini
1/4 cup pasta sauce
1/4 cup mozzarella cheese
salt & pepper to taste
5 foil muffin tins
Preheat oven to 375 degrees F. Spray a muffin tin with cooking spray.
Mix ricotta, parmesan, salt and pepper until well combined.
Slice the zucchini into thin slices, about 1/4 inch thick or as thin as possible
Put wonton wrappers in the muffin tin. Push the center of the wrapper down into the tin, forming a cup.
Spoon ricotta mixture into the wonton cups. Place zucchini slices on the ricotta and press down slightly.
Top with pasta sauce and mozzarella.
Bake for 12 minutes. The edges of the exposed wonton wrappers should be golden brown and crisp. To make sure the zucchini softens, cook for as long as possible without burning the wontons.
Let the cups cool for 5 minutes before removing and serving. Enjoy!
